Stuffed Mini Cucumber

Ingredients:

1 mini cucumber

1 tsp. sunflower seeds

3 tomato (firm, cherry)

3 oz. cottage cheese

2 sprigs basil

Salt and ground pepper to taste

Instructions:

1. Rinse and dry mini cucumber, cut in half lengthwise, and remove seeds with a spoon. 

2. Toast sunflower seeds in a dry non-stick pan until light brown. 

3. Rinse the tomatoes, drain and cut out stems. Cut tomatoes into quarters, then into fine dice. 

4. Mix cottage cheese in a small bowl with toasted sunflower seeds and diced tomatoes. Season to taste with salt and pepper. 

5. Rinse and dry basil, pluck leaves and cut into fine strips. Fill cucumber halves with the tomato, cream cheese mix, top with basil, and serve.
