Salmon Bok Choy Bake

Ingredients:

  • 1/3 cup soy sauce (or liquid aminos)
  • 2 tbs olive oil
  • 2 tbs white wine
  • 1 tsp sesame oil
  • 1 piece ginger, peeled and minced
  • 2 cloves garlic, minced (or spring garlic bulb and greens)
  • 1 big bunch boy choy, roughly chopped
  • 1.5 lbs salmon fillets
  • 1-2 stalks spring onions chopped with greens included (or green onions)

Instructions:

Mix soy sauce, oils, white wine, ginger, and garlic together. Set aside. 

Place bok choy in 9x13 pan. Place fish fillet on top of bok choy.

Top with liquid mixture and chopped onions. Cover with Foil. Bake at 425 until almost cooked - about 20 mins. Remove foil and broil for another 3 to 5 minutes for more crisp.


*add other veggies to the bok choy mixture if desired.
