Purple Asparagus Salad

Ingredients:

2lbs purple asparagus

¾ cup toasted pine nuts

¼ cup mint leaves

¼ cup basil leaves, chopped

1 cup red onion

2 tbsp lemon juice

2 tbsp Dijon mustard

3 tbsp olive oil

Salt and pepper to taste



Instructions:

In a large bowl combine all ingredients. Toss and serve chilled.
